Just wanted to drop you a quick note that I really enjoyed the class.  I have had to do the re-certification many times now throughout my career and like to take the full class as I always find it a good reminder of things that we could be doing better in our daily jobs.  It was great to have the class instructed by a chef who knows the real parts of the business and discusses real world situations.  The last time I re-certificated 5 years ago we read through the book aloud around the class room.  Extremely boring…… There was not the extra that your class delivered.  Perfect amount of knowledge and some humor.
